Vad är det som är så speciellt med The Black Swan at Oldstead?

Ja, det kan man ju undra!  

Det är nämligen så att de har blivit utsedda till världens bästa restaurang enligt TripAdvisor Travelers Choice! Det är ju hur häftigt som helst, och prestigefullt som attans! Att ha blivit utnämnd till nummer 1 på denna lista slår många andra utmärkelser då man för att hamna på just denna lista alltså har fått så höga betyg utav sina gäster att ens rankning nått såhär högt.

Sigdal Bakeri

Actually, I'm not such a huge fan of crispbread, or rather, I'm quite picky when it comes to this. We only have one kind of crisp bread at our home. This after trying through virtually every single kind found at the grocery store, haha.

But suddenly it happens! I recently got the chance to try two different crispbreads from the Norwegian bakery Sigdal Bakeri located in the small town of Prestfoss in Norway. And their crispbreads was great!






Herbs & Sea Salt: Clear taste from herbs such as rosemary and thyme as well as just a lot of sea salt that only accompanies and enhances the flavors and the whole.












Oats: Sweet in the taste with tones of hot honey and hay. Just as crunchy as you want it. Incredibly good together with avocado and a glass of pomegranate juice






Which was the best then?

- Clearly Oats, these would be good to have everything from a cheese tray to a musical soup a bill Swedish summer day!

They sell their stuff here in Sweden as well, so swing by your nearest grocery store and try them out for yourself!



This was sent to me from P. PR & Communications as they wanted me to try these and give my review of them. And I can promise you that if I hadn't liked one of them or even neither of them, I would have said that. I am so incredibly thankful that I get to do these things that I just can't find words for it. Thank you to everybody who are making this possible for me.

The Great Influencer Prize 2017


Influencers of Sweden, which I am a proud member of, has introduced an award for influencers!

Text taken from the press release and translated into english: This fall, Sweden's most creative and business-driven content creator is celebrated with a brand new industry award - "The Great Influencer Prize". The prize is instituted by Influencers of Sweden, the Swedish organization for social media influencers.

The Great Influencing Prize is Sweden's new industry award for social media influencers. Here, Sweden's most innovative and business-focused influencers are praised in eleven different categories and a honorary award.

"This is a price for the industry and those who lead it forward. A prize given to those who run their influenza as a business and inspire others to do the same, " says Linda Hörnfeldt, CEO and founder of Influencers of Sweden. "Of course, with the focus of the follower!"

The Great Influence Prize is for creators and inspirators on all platforms - blogs, instagrams, youtube, facebook, twitter, and more. "We believe the time for pricing profiles by platform is over - the future is for cross-border communication and business", Hörnfeldt says. "Everything is in the end all about the brand and the relationship that you have with your audience, this is what we want to focus on."

An industry expert jury nominates nine winners and two of the prizes, "Influencer of the Year" and "Member of the Year" are voted by the audience and members of Influencers of Sweden respectively.

The open nomination period begins on June 7th and prizes are awarded on a gala at the Elite Marina Tower on October 13, 2017. For more information and all categories, see

Guide Michelin ***

I think that everyone of you have heard of it, but do you know the story behind it?Did it just appear out of thin air? No, no, no. Let me tell you! 


The very first michelin guide came as early as in the year 1900 by the initiative of the tire manufacturer Michelin. In the beginning it was distributed for free to anyone who bought a new car. The purpose of the guide was actually to get people to tear the tires so much that they needed to buy new ones, haha. They were encouraged to travel as far as possible outside of Paris to the countryside for this to happen. They also had another intention with the bible, oh sorry! I mean the Michelin Guide (hehe!), this was to raise the interest for traveling by car so that more people would by one and then wear their tires out. haha, brilliant. Maybe not that environmentally friendly, but hey! Who cared in the beginning of the 20th century? Right?! ;)

The purpose in the beginning was to simplify peoples travel by car and it wasn't formed as the ones we have today, the early ones contained information about where to stop for gas, how to change light bulbs and tires, where to stop for a meal och sleep over.

The star-system was first introduced 30 years in, in the 30's. The food in the guide is rated with stars, from 1 to 3. The ratings for the environment, service and other impressions is rewarded with cutlery, from 1 to 5. The hotels are rewarded in the same way as the restaurants but with house symbols in different sizes. Red cutlery and house symbols are given to particularly pleasant restaurants and hotels.


The stars are only based on the food served.

Beside that, there's five criterias the inspectors look for: 1. The quality of the ingredients 2. The craftmanship - for example the taste and preparation 3. The personality -  how well the cook succeeds in finding his own expression within the dishes 4. Value for the money 5. The quality over time - There must be an equally amazing experience, no matter when you visit the restaurant

All the inspectors working for Guide Michelin are anonymous to assure the readers of the guide that they do not receive special service or treatment, just as any other guest.

The michelin guide's overall mission was back then, and still is, "a better way forward".

What a week!

Hi there all you wonderful people! The last week has been really overwhelming, wow how much stuff that has happened. And also, all the things that has happened have been positive!

I got a new job, I landed several new exciting projects, I experienced an UFC fight (as audience! Haha), I caught the moment when The Mauler proposed to his girlfriend after winning his fight, I met a lot of inspiring people, I lectured at the Restaurang Academy (more in a separate post), I went to Smaka på Stockholm, We had the first barbeque of the year, ...yep, everything is simply very good right now!

Hey!Why don’t you get out in to the woods and cook some breakfast over an open fire?!

Follow my lead:

Recipe for approx. 6 big banana pancakes: 1 Banana 2 Eggs 1 Teacup flour 1 Tablespoon baking powder 2 Tablespoon vanilla powder 1 Teaspoon fine grinded cardamom 1 Teaspoon fine grinded cinnamon1 Teacup 50/50 heavy cream & fat milk 50 grams of melted butter

- Start a fire at a safe place to do this - Mash the banana in a bowl - Crack the two eggs in to the bowl and mix - Add the dry ingredients and stir everything together - Pour the heavy cream/milk in to the bowl and stir - Melt the butter over your open fire in a saucepan - Add the melted butter in to the bowl and mix everything together - Start frying your pancakes with the batter!

Enjoy with some sprinkled honey on top and some jam!


Brunch in the woods

One of the best thing I know is to just pack my backpack and walk out on an adventure into the woods. That I did today actually! I grabbed my backpack and went to this really great spot only a few minutes away from where I live to cook some brunch. Bacon and eggs! Of course accompanied with freshly brewed coffee. Oh my gosh how good it tasted, there is something with the smokiness when cooking outside over an open fire that adds flavor in a way. I love it!

Review: Den Gyldene Freden, Stockholm

Time for another restaurant review!Have you ever been to Den Gyldene Freden in Gamla Stan, Stockholm? If you haven't, read my review and then make a visit, it's great!

Den Gyldene Freden Stockholm, Sweden 2015-10-19

Located on Österlånggatan 51 in Gamla Stan, Stockholm, lies the enchanting Gyldene Freden. Listed as an up-and-running restaurant business, or at least a place to find food, since 1722 (!), this is considered a very unique place to spend an evening enjoying a gastronomic experience. It's the third time I visit the restaurant and I am equally impressed every time. To obstinately remain of the traditions that have taken place over the years by maintaining this rustic and delicious cooking in which every component of the dishes consists of carefully chosen and taken care of, to later on being refined in the same waterproof technique as made for generations. You can't be anything else than totally amazed.

The environment plays a very serious part in this gastronomic experience, you travel as in a time machine back in time and almost personally can invite make a toast together with names like Anders Zorn, Carl Michael Bellman, Evert Taube and Cornelis Vreeswijk, who all have housed in this place and whose souls certainly remain in the walls to keep an eye on everything going on as it should.

We were a party of 4 who enjoyed this dinner a cool Monday evening in October, one of us in a wheelchair, which for the restaurant was no problem logistically at all. However, the toilet was located on the Bellman floor and you had to take a staff elevator to get there, but this was arranged very smoothly by this evening's head waiter who escorted us in a very stylish way.

During the evening we ate Zorn's meatballs and "Fredens weekday dinner" which today consisted of Veal in dill sauce. Both deliciously prepared with bright flavors where everything from the reduced meat stock, to the cream sauce, to the perfectly balanced salt content of the potato puree was found among the subtle flavors. The calf is perfectly tenderized from being slow cooked earlier during the day, and the perfectly balanced vinegar essence in the dill sauce lurks with its restrained acid.

A world-class restaurant with its unique history and remnant of the rustic and genuine. A perfect restaurant to invite your loved one, friends, or the whole family to thus there really is something that suits everyone.

Price range: Dishes: 120-390: -, Tasting menu: 690: - (+ Beverages 400 :-). Type of cuisine: Swedish. Do not miss: Zorn's meatballs. Wheelchair adapted: Partially. Would I go here again: Absolutely. Awards: Bib Gourmand (Sixth consecutive year, 2015). Rating: 4/5

Beläget på Österlånggatan 51 i Gamla Stan, Stockholm, ligger den anrika Gyldene Freden. Noterat som up-and-running restaurangverksamhet, eller åtminstone ställe där man kan finna mat, sedan 1722 (!) ter sig detta som en mycket unik plats att tillbringa en kväll avnjutandes en gastronomisk upplevelse. Det är tredje gången jag besöker restaurangen och jag blir lika imponerad varje gång, att envetet hålla kvar vid de traditioner som satts under årens lopp genom att bibehålla denna rustika och gedigna matlagning där varenda komponent som rätterna består utav noga har valts ut samt tagits hand om och förädlats på samma vattentäta tillvägagångssätt i generationer, gör att det inte går annat än att bli totalt hänförd.

Miljön spelar ett stort allvarligt spel i denna gastronomiska upplevelse, man reser likt en i tidsmaskin bakåt i tiden och kan nästintill personligen inbjuda till skål tillsammans med namn som Anders Zorn, Carl Michael Bellman, Evert Taube och Cornelis Vreeswijk som samtliga har huserat i detta hus och vars själar med all säkerhet sitter kvar i väggarna och håller ett öga på att allt går tillväga som det ska.

Vi var ett sällskap om 4 som avnjöt denna middag en kylig måndagsafton i Oktober, en utav oss var rullstolsburen, vilket för restaurangen inte var några som helst problem logistiskt sett. Dock var toaletten en våning upp i Bellmanvåningen och man var tvungen att ta en personalhiss för att komma dit, men detta ordnades mycket smidigt utav kvällens hovmästare som eskorterade oss på ett mycket stilfullt sätt.

Under kvällen åt vi Zorns köttbullar samt “Fredens vardagsmiddag” som denna dag bestod utav Kalv i dillsås. Båda mycket utsökt anrättade med tydliga smaker där allt i från den reducerade köttfonden i gräddsåsen till den perfekt balanserade salthalten i potatispurén gick att finna bland de subtila smakerna. Kalven perfekt mörad från dess långkok tidigare under dagen samt den perfekt avvägda ättikspriten i dillsåsen som ligger och lurar med sin återhållsamma syra.

En restaurang i världsklass med dess unika historia och kvarlevande känsla för det rustika, äkta och genuina. En perfekt restaurang att bjuda med sin allra närmaste, käraste eller rent utav hela familj till då det verkligen finns något som passar alla.

Review: Sjömagasinet, Gothenburg

Today I thought that I would publish one of my previous restaurant reviews from when me and Nathalie visited restaurant Sjömagasinet in Gothenburg a few summers ago. English version: (Original review in Swedish and pictures from our visit below)

Sjömagasinet Gothenburg, Sweden 2015-07-08

Situated right by the sea in the Klippan Cultural Reserve south of Gothenburg city, you will find enchanting Sjömagasinet housed in an old magazine, built in 1775. Name and reputation built by Leif Mannerström himself and Lars Ahlström between 1994 and 2010, to then put this in the same good sense under the direction of Ulf Wagner together with Gustav Trädgårdh. Yes, there are some real heavyweight name who bear the responsibility for this robust, in both pure physical and gastronomic sense, fine-tuned restaurant.

It's a very relaxed atmosphere when you step inside. At the door we are welcomed by a cloakroom attendant who receives our jackets, closely followed by a head waiter who shows us to the table. There is a perfect balance between the "correct" upon arrival to capture the guests in a lovely buzz and later the acted untouched professionalism when the menu and wine list are described simply from memory, especially considering that it is a star restaurant we are situated in.

We enjoy the "Sjömagasinets meny" which this season, among other things, consists of grilled tuna together with sashimi on scallops served together with a miso mayonnaise and thin sliced green asparagus, a grilled pikeperch served with fried potatoes and a lobster bearnaise sauce. However, the menu was not very well balanced as it contained quite heavy dishes throughout. The appetizer consisting of a tomato gazpacho was the element that gave a slightly more cozy element with its fresh and lightly sour tone.

Sjömagasinet is a restaurant that certainly has a high class concerning both service and cooking, the location is very unique which in some ways are positive, but the surroundings have more to be desired of when the restaurant is surrounded by parks and industrial areas. Of course, inevitably, it has blossomed up in modern times, but the overall impression is affected despite this. The menu changes every season, acting as a fresh fan which also allows you to visit frequently.

Price range: Dishes: Approx. 150 SEK (À la carte lunch only), Tasting menus: 645 - 895 SEK. Type of cuisine: Swedish, Fish. Do not miss: The incredibly wide wine list. Wheelchair adapted: Yes. Would I go here again: I would like to give it another chance. Awards: 1 Guide Michelin star. Rating: 3/5

Sjömagasinet Göteborg, Sverige 2015-07-08

Beläget precis vid havet i Klippans Kulturreservat söder om Göteborg stad finner man anrika Sjömagasinet huserat i ett gammalt magasin byggt redan 1775. Namn och rykte uppbyggt utav självaste Leif Mannerström och Lars Ahlström mellan 1994 och 2010, för att sedan försätta stoltsera i samma goda mening under regi utav Ulf Wagner tillsammans med Gustav Trädgårdh. Ja, det är några riktiga tungviktare som axlat ansvar för denna robusta, i både rent fysisk samt gastronomisk mening, fint stämda restaurang.

Det är en mycket avslappnad atmosfär man kliver in i. Vid dörren tas vi emot utav en garderobiär som tar emot våra jackor, tätt följt utav en hovmästare som visar oss till bordet. Det finns en perfekt balans mellan det ”korrekta” vid ankomsten för att fånga in gästerna i ett härligt surr och senare den till sättet agerat obrydda professionalismen när menyn och vinlistan beskrivs ofelbart rakt från minnet, speciellt med beaktning till att det är en stjärnkrog vi vistas i.   

Vi avnjuter ”Sjömagasinets meny” som denna säsong bland annat består utav halstrad tonfisk tillsammans med sashimi på pilgrimsmussla serverat tillsammans med en misomajonnäs och tunt skivad grön sparris, en halstrad gös serverad tillsammans med friterad potatis och en hummerbearneisesås. Menyn var dock inte särskilt välbalanserad då den innehöll ganska tunga rätter överlag. Aptitretaren bestående utav en tomatgazpacho var det inslag som gav ett något gemytligare inslag med sin fräschör och lätt syrliga ton.

Sjömagasinet är en restaurang som förvisso innehar en hög klass både servicemässigt och matlagningsmässigt, läget är väldigt eget vilket på ett sätt är positivt men omgivningen har annat att önska då restaurangen omges utav parkeringar och industriområden. Självklart oundvikligt då edsas blossat upp i modern tid, men helhetsintrycket påverkas trots detta. Menyn ändras varje säsong vilket agerar som en frisk fläkt och som gör att man kan besöka ofta.

Chef's Table - Season 3

Chef's Table Season 3 on Netflix! Watch it. It's like everything I have to say about it. The production of this series is amazing. Every frame, photo, angle, view, everything! So incredibly inspiring to watch.

Although not as great as the first season, but still pretty awesome. Watch it!
